Healthy Chocolate Peppermint Cups

When I think about an after dinner mint I am transported back to dinners out with my family. As a kid, Mum and Dad would treat my sister and I to dinner at the local Chinese restaurant when ever we had been particularly good or achieved something. At the end of the banquet the bill would come out with 4 after dinner mints. I would savour mine, it was the final treat after an already exciting and happy night.


It's been a long time since my family has been to that small Chinese restaurant, I don't even know if it is still there, but these peppermint cups take me right back to being surrounded by my family and celebrating each time I eat one. The best part is these cups are filled with healthy whole ingredients that not only feed my soul but my body, so you don't need to feel guilty about eating 3 or 10.


These peppermint cups are super easy to make and are huge crowd pleasers. Put a little love into these and share them around, your loved ones will thank you for it!


Ingredients

Base

  • 1 cup of oats

  • 1 tablespoon of cocoa powder

  • 2 tablespoons of ground flaxseed (or LSA)

  • 1 tablespoon of coconut sugar

  • 2 tablespoons of coconut oil

  • 2 tablespoons of rice malt syrup

Filling

  • 1/2 a cup of sunflower seeds

  • 1 teaspoon of peppermint extract

  • 2 tablespoons of rice malt syrup

Topping

  • 50g of dark chocolate



Method

  1. Preheat oven to 160 C (fan forced), and grease a 24x mini muffin tray or use a silicon mini cupcake tray - no need to grease

  2. Place oats, cocoa powder, ground flaxseed and coconut sugar into a blender or processor and pulse until mixture resembles that of a flour.

  3. In a heat proof bowl combine and melt coconut oil and rice malt syrup. Once melted add in the rest of the base ingredients and combine.

  4. Spoon warm mixture into prepared muffin/cupcake try and mold into cups.

  5. Bake in the oven for 5 minutes.

  6. Reshape while warm if needed otherwise allow to cool and set.

  7. Place all filling ingredients into a clean blender or food processor and pulse until creamy. Another alternative can be to crush the sunflower seeds in a mortar and pestle until finely ground and mix in rice malt syrup.

  8. Spoon the filling into cups.

  9. Melt dark chocolate in a heat proof bowl and spread over filled cups.

  10. Allow cups to set in the fridge before eating.
